Carrot Apple Pumpkin Soup

Is it almost fall or what?! I have been feeling so inspired and motivated with my Instagram food account, that I'm taking the plunge into recipe testing! My dream is to have my own cookbook, but I feel like a huge mental block for me is creating recipes. I don't really even know what it means to "create" a recipe, I mean ALL my cookbooks have some variation of the same pasta or burger or whatever. But then this past week with my Farm To Fork fresh produce box, it's felt like a personal goal of mine to make the most of everything I received. Cue this inspiration for my first recipe trial: soup! Maybe that cookbook dream isn't so far away, because this came out next level fantastic. I mean... I would order this in a restaurant. My best friend called it "fall in one bite." It is so flavorful and creamy (with absolutely no dairy) with that after taste of spiced cinnamon apple. Wowza!

The past week I've only used fresh local farm produce, and everything has been incredibly flavorful and lasted me noticeably longer than the produce I get from the grocery store.


Ingredients

  • 1 lb carrots, peeled and chopped

  • 1 yellow onion, diced

  • 3 small gala apples, peeled and chopped

  • 4 cups chicken broth (I use Better Than Bouillon)

  • 1 can pure pumpkin puree

  • 1 teaspoon cinnamon

  • fresh cracked pepper

  • pinch of salt

  • 4 tablespoons butter

Directions

  1. Melt the butter in a large stock pot, add in the onions and saute until translucent, about 5-6 minutes.

  2. Add in the chopped carrots and apples, saute for about 5 minutes.

  3. Add in the broth, the can of pumpkin puree, salt, pepper, and cinnamon. Bring to a boil a let it simmer covered until the apples and carrots soften, about 20 minutes.

  4. Let the soup cool for about 5 minutes, then use a blender to blend all the ingredients together. I like to use my immersion blender for soups, linked here.

  5. I like to top mine with a little extra dash of cinnamon. Enjoy!
