Roasted Delicata Squash Pizza, Drizzled with Honey and Red Pepper Flakes

The official unspoken test of pizza should be: Does it taste better the next day? If your answer is yes, you have a winner!!! Not to say that it doesn't taste just incredible when it is fresh out of the oven. If you are looking for both of those things, look no further. I have the most epic fall pizza written out below.

Ingredients for 2 personal sized pizzas
1 delicata squash, sliced in half lengthwise, then sliced crosswise to form a crescent shape
olive oil (I used my garlic infused olive oil) for the pizza, and regular flavor for the squash. 2 TBs of each (or about 4 TBs total)
ricotta cheese (the quality of the cheese is everything, just splurge the extra dollar or two and get some Murray's whole milk ricotta)
red pepper flakes
1/4 teaspoon salt
1/4 teaspoon pepper
honey, enough for a generous drizzle
pizza dough, store bought or homemade
Directions
Preheat your oven to 400 degrees. You will roast the squash first, and then bump the heat up to your pizza dough package instructions or as high as it will go for my homemade dough.
Toss the squash with 2 TBs olive oil, salt and pepper. Arrange on a baking sheet and roast for 20 minutes, flipping them halfway through.
Stretch out your pizza dough and brush about a tablespoon of olive oil all over it. This is where I like to use the garlic infused olive oil.
Arrange the roasted delicata squash and spoonfuls of ricotta cheese around the pizza. Sprinkle red pepper flakes to taste.
Bake the pizza according to instructions.
When the pizza comes out of the oven before you slice, drizzle with honey.
