I always use homemade dough for our pizzas, which is actually incredibly easy to do if you can remember to do it the day before. A stand mixer ( this Kitchen Aid one is on super sale if you're into the red color!!) and kitchen scale are helpful tools to have for dough.

The 5 Ingredients

  • 500 grams flour + have some on the side

  • 125 grams of warm water

  • 1/4 teaspoon of instant yeast

  • 1/2 teaspoon of salt

  • 1 tablespoon of olive oil

Directions

  1. Combine the water and yeast in a bowl, let it sit for 3-5 minutes. Meanwhile, measure the flour and salt and put it into your mixing bowl.

  2. With your mixer set on low speed and using your dough hook attachment, slowly add the water to the flour until there is no more water left. Increase the speed to medium on the mixer.

  3. The dough should be staying together in a ball, not sticking to the side of the bowl. If it is sticking, add more flour in tablespoon increments. You want the dough to be sticky to your fingers, but not to the bowl.

  4. Keep the mixer on medium speed for about 8 minutes. While the dough is mixing, lightly brush a large bowl with olive oil.

  5. When the dough is done mixing, transfer it to the oiled bowl. You may want to dust some flour on your hands before making the transfer. Leave the dough out for one hour at room temperature, covered with a dish cloth.

  6. After the hour, punch the dough down, cover the bowl with plastic wrap, and place in the fridge overnight.

  7. About two hours before you want to start making the pizzas, pull the dough out of the bowl and let it rest at room temperature on a floured surface for one hour. At the one hour mark, divide the dough in half and form two round balls. Let those rest for another hour. Use for any type of pizza! If you are into thinner crust, divide the dough into four balls rather than two.

TIP #1: When you are forming the balls into the flat, circular pizza shape do not fold the dough!!! For the love of pizza! Keep the ball/round shape that you just spent 24 hours creating and stretch it out into the flat circle we all love.

TIP #2: Set your oven to the highest temp it will go to (I think mine is 550 degrees), and let it sit at that temperature for at least 10-15 minutes after it preheats. The pizza should take anywhere from 5 minutes (if you went thin crust) to maybe 10ish if you only divided the dough into two pizzas.
