Air Fried Chicken Lettuce Wraps

This past weekend I flew down to Texas to spend a weekend on Lake LBJ with friends from high school. There is just something about the lakes in Texas! The mornings are so quiet and peaceful, and the days drag out so long in the sun that you fall into the perfect skin-warmed sleep at night. It's one of those soul-filled trips that you leave feeling refreshed and reset. Also, it is infinitely more fun to go on trips with friends that we have known for so long, that really make Texas feel like coming home. Caroline and Eve, the other two girls on the trip, also love to cook and weeks ago we excitedly planned our menu for the lake. Cue this masterpiece brought to us by Caroline! She brought her air fryer, which I am convinced might be the best one I have ever seen or used. So many features and can fit so much food.
We planned this meal as a lunch because it is super quick to throw together and everyone can make their own when they get in from the lake. Serves 5-7.


Ingredients
1/2 cup bread crumbs (I like the garlic herb flavor)
1/2 cup Panko
1 TBs red pepper flakes, use less depending on spice tolerance
2 eggs
3 to 4 chicken breasts, cut into strips
black pepper
large lettuce leaves (use whichever variety you prefer, as long as the leaf is large enough to fit a chicken strip)
Olive oil or avocado oil spray
Directions
Preheat the air fryer to 400 degrees. Pull out the wire rack from the air fryer, you'll want to place the chicken strips on here when they have been prepared.
Season the chicken strips with black pepper. Set aside.
Crack two eggs into a shallow bowl and whisk.
In a separate bowl combine the bread crumbs, Japanese bread crumbs, and red pepper flakes until everything is evenly distributed.
Using one hand (wet hand), grab one chicken strip and dip it in the egg wash. Give it a little shake so that any extra egg wash will fall back into the bowl. Transfer the chicken strip from the egg wash bowl to the bread crumb bowl.
Using your other hand (dry hand), cover the chicken strip with bread crumbs. Gently transfer to the wire rack. Repeat for all chicken strips that will fit on this rack, you may have to do multiple batches.
When the rack is full, lightly spray both sides with oil.
Air fry for six minutes on each side.
Place one chicken strip in a lettuce leaf "taco style" and top with your favorite sauce or condiment! We had BBQ, Frank's, and habanero sauce as our options.
